3 Sweet & Safe Desserts For Diabetics

Living with diabetes is all about managing the amount of sugar the body takes in daily, but it can be quite difficult to resist the sweet goodness of the desserts we all love!  Sugar releases those feel-good chemicals in the brain which bring about happiness and joy, and being diabetic shouldn’t put a damper on a naturally healthy high.  If you are diabetic and need a healthier way to kick a sweet tooth, check out these dessert recipes that are diabetic conscious yet jam packed with the sweetness you desire!

The following dessert recipes are made with sugar-free ingredients or natural sweeteners to reduce the amounts of sugar absorbed after consumption:

1. Melon salad

Fruit is naturally sweet and can be dressed up to satisfy any sweet tooth.  To create this diabetic safe dessert, combine 3 cups of cubed cantaloupe with 3 cups of cubed honey dew melon.  Sprinkle with 1 tablespoon of chopped mint leaves and 1 teaspoon of honey.  Toss gently to coat the fruit evenly and then serve!

2. Mock Ice Cream Sandwiches

This is a great treat for those who are fans of ice cream, yet are looking for a less fattening and less sugary source of a frozen treat. Take 2 cups of fat-free whipped topping and mix in ½ cup of miniature semisweet chocolate chips. Break 8 whole chocolate graham crackers in half and spread the mixture on one half of the cracker and top it off with another half.  Wrap the sandwiches in plastic and freeze for at least one hour and voila! Your diabetic friendly mock ice cream sandwiches are ready to go!

 

3. Swirled Cheesecake Brownies

Who can resist cheesecake, especially when it is combined with the moist richness of a fudge brownie! To make these diabetic friendly beauties, you will need a few ingredients and about two hours to mix and bake them to perfection.

For the cheesecake topping, you will need 4 ounces of reduced-fat cream cheese, 1/4 cup sugar, 1 large egg, 1 tablespoon all purpose flour, 1 tablespoon nonfat plain yogurt and 1/2 teaspoon vanilla extract.

For the brownie layer, you will need 2/3 cup whole wheat pastry flour, 1/2 cup unsweetened cocoa powder, 1/4th teaspoon salt, 1 large egg, 2 large egg whites, 1 1/4 cups packed light brown sugar, 1/4 cup canola oil, 1/4 cup strong coffee or black tea and 2 teaspoons vanilla extract.

Mix together the ingredients for each layer separately.  Preheat the oven to 350 degrees and coat a 7-by-11 inch brownie or baking pan.  Fill the pan half way with brownie mix and then layer the cheesecake layer on top.  Use a skewer or toothpick to create a swirled pattern in the mixture and place in the oven to bake for 20 minutes. Let the brownies cool before cutting them with a knife coated in cooking spray. Cutting them into small squares will help with portion and calorie control.
