
I don’t know about you, but I love beets. If you don’t already know, beets are high in potassium, magnesium, fiber, phosphorus, iron, vitamins A, B & C, beta-carotene, beta-cyanine; folic acid and that’s just a few of the many vitamins and minerals that you can get from beets and beet greens. For this recipe, I chose to roast them so that I could add some additional flavoring.

GINGER ROASTED BEETS
SERVES 4-6
Ingredients
6-8 large beets about 2 inches in diameter
1 tablespoon fresh ginger, minced
2 oranges
2 teaspoons agave or honey
1 tablespoon butter
1 teaspoon salt (sea or kosher)
1/2 teaspoon black pepper
